The Culinary Arts Institute Encyclopedic Cookbook is a 1965 New Revised Deluxe Edition hardcover edited by Ruth Berolzheimer, published by the Culinary Arts Institute in Chicago and distributed by Grosset & Dunlap.
This copy has a taped spine, worn yellow covers, and scattered page staining, but the recipes remain readable, and several handwritten recipes and three 1983 Christmas seal greeting stamps are tucked inside.
Built as an everyday kitchen reference, this large cookbook covers everything from planning family meals and baking cakes to preserving food, preparing seafood, and setting a table. Its thumb-tabbed sections make it easy to move between recipes, menus, cooking methods, and household food information.
Among the pictured recipes are Treasure Chest Cake, Spiced Prune Loaf Cake, Baked Meringue Spice Cake, Maine Baked Haddie, Fish Chowder, and Fried Frogs' Legs.

Issues / Wear
This 1965 cookbook still holds the handwritten recipes its previous owner saved, along with three Christmas seals from 1983. For someone who enjoys cooking from older recipes and keeping the little pieces of kitchen history that came with them, those papers are part of what makes this particular copy worth choosing. If it's the right copy for you, it's ready to come home.
Every item is honestly described and carefully packed. These are vintage pieces, so light age-related wear comes with them. I show and describe what I see so you know what to expect.

Every listing spells it out and shows it in photos. Chips, hairlines, crazing, worn plating, old repairs. If I did not mention it, it is not there.
Yes. Every photo is the actual piece, taken by me. When it sells, it is gone.
I note maker, mark, era, and measurements when I can confirm them, and say so plainly when I cannot. Unmarked pieces get dated by what the piece itself shows.
I process order within 2 business days, wrapped and boxed so it arrives the way it left here. Don't forget, free shipping on orders $35 and up.
