The Culinary Arts Institute Cookbook it's all here: from the basic to the gourmet, from preparation to serving, all presented in a transparent, concise, straightforward manner. Recipes for all levels of expertise are included, from basic broccoli to artichoke souffle.
This book is in good shape for its age with no rips or tears. The cream book boards are yellowed with age. I found one small stain in the index; this doesn't affect reading the page. Please note the previous owner place a sticker with her name on the inside cover. The pages feel wavy, but I cannot find any water damage or staining in the cookbook.
